On a recent site inspection at the Ritz Carlton Half Moon Bay we learned it’s an amazing place for chocolate lovers.  Among the large array of amenities and activities the hotel boasts an outdoor hot chocolate bar, chocolate tastings in the wine bar ENO and s'mores kits for roasting marshmallows in the outdoor fire pits.  We were treated to Spiced Chocolate Chunk cookies on our tour and brought back the recipe with us.  Don't forget to check out the hotel HERE

 

1 ¾ cup Flour
1 tsp. Salt
1 tsp. Baking Soda
1 tsp. Cinnamon
½ tsp. Nutmeg
1 tsp. Allspice
½ tsp. Cloves
1 cup Unsalted Butter
¾ cup Sugar
¾ cup Brown Sugar
2 Eggs
1 tbsp. Molasses
1 ½ cup Chocolate Chunks

 

Preheat oven to 325 degrees.
Sift dry ingredients  and set aside.
Cream butter, sugars and molasses until light and fluffy.
Add eggs, one at a time.
Add dry ingredients to butter mixture.
Add chocolate chunks and mix until distributed evenly.
Scoop cookie dough onto a sheet pan lined with parchment paper.
Place in oven for 5 minutes, rotate and continue to bake until light brown (checking after 3 minutes.)
