This year, Jon Ashton and other chefs are coming aboard to share their delicious recipes. Here’s one of chef Aston’s signature recipes that you can make at home.

Grilled Chicken Tacos

5 boneless chicken thighs
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 1/2 tablespoons freshly squeezed lemon juice
1/2 cup extra-virgin olive oil
1 tablespoon ground chipotle pepper
1 teaspoon smoked paprika
1 tablespoon dried oregano
1 1/2 tablespoons brown sugar
4 cloves garlic, sliced
8 tortillas
1 lemon or lime, cut into quarters

Garnishes:

Caramelized onions
Guacamole
Lime wedges
Chopped cilantro
Sun-dried tomato strips
Cotija cheese
Thinly sliced jalapeño

Directions:

Clean the chicken thighs by rinsing under cold water, and dry with a paper towel. Season the chicken on both sides with salt and pepper. Combine all the marinade ingredients in a large mixing bowl. Marinate thighs in fridge for at least 3 hours. Remove bowl from fridge up to two hours before cooking. Preheat grill to medium-high up to 20 minutes before grilling. Grill chicken 3-5 minutes per side. Remove from grill and let rest. Slice chicken into lengthwise strips. Spoon chicken into warm tortillas and top with any of the garnishes listed. Serve with lime wedges.
